Rice Soup

2.25lt (4 pints) White Stock
110g (4oz) Patna Rice
Mace
Cayenne
Salt

Put the rice into boiling water and let it remain 5 minutes.
Pour it into a sieve and allow it to drain well.
Add it to the stock boiling and allow it to stew until it is quite tender.
Season to taste.
Serve quickly.

Time: 1 hour.
Sufficient for 8 persons.
Seasonable all the year.

RICE SOUP

150. INGREDIENTS - 4 oz. of Patna rice, salt, cayenne, and mace, 2 quarts of white stock.

Mode - Throw the rice into boiling water, and let it remain 5 minutes; then pour it into a sieve, and allow it to drain well. Now add it to the stock boiling, and allow it to stew till it is quite tender; season to taste. Serve quickly.

Time - 1 hour.

Average cost, 1s. 3d. per quart.

Seasonable all the year. Sufficient for 8 persons.
