Kent Farmhouse Chicken

1.6kg (3½lb)
600ml (1 pint) Milk, warm
225g (8oz) Brown Long-grain Rice
4 Small Onions, peeled
¼ tsp Dried sage
¼ tsp Mace
Fresh Cream (Optional)
Salt and pepper, to taste

Pre-heat oven to 120°C: 250°F: Gas ½
Clean and wipe the chicken.
Place it in the centre of a casserole.
Wash the rice with many changes of water to remove some of the starch.
Spread the rice around the chicken, sprinkle over the dried sage, mace and season to taste.
Place a peeled but whole onion at each corner.
Pour over the warmed milk.
Cover tightly and cook for two hours, if the rice begins to dry out add a little more milk.
Increase the heat to 200°C; 400°F: Gas 6 and cook for a further 30 minutes.
Add a little cream, if used.
Serve with seasonal vegetables.
