1 Cow Heel
1 Onion
Salt and Pepper
Place the meats into a large saucepan, cover with water, bring to the boil,.
Add the onion and season to taste.
Cover and simmer gently for 4 hours, or until cooked and easily drops off the bones, skimming the surface as needed.
Remove any skin, bones or waste.
Season the liquid, pour into mould or basin.
Leave 12 hours to set.
