Turkey Drovers Dinner
680g (1lb 8oz) Cooked Turkey
565g - 680g (1lb 4oz - 1lb 8oz) Mashed Potatoes
110g (4oz) Mushrooms
50g (2oz) Green Pepper, chopped
50g (2oz) Red Pepper
50g (2oz) Celery, chopped
50g (2oz) Onion, chopped
2 tins Cream of Mushroom Soup
28g (1oz) Butter
Salt and Pepper
Cheddar Cheese [optional]
Clean and chop the peppers, celery and onion.
In a frying pan, sauté in the butter until softened.
Slice or quarter the mushrooms.
Add to the vegetables and cook for 2 minutes.
Remove from the heat.
Mix the vegetables and the diced turkey and season to taste.
Place in a casserole dish.
Pour over the mushroom soup.
Spread or pipe over the mashed potatoes, (sprinkle with grated cheese, if used).
Preheat oven to 170°C: 325°F: Gas 3.
Bake for 30-35 minutes or until lightly golden.
Place under a pre-heated, grill if desired.
