Free Kirk Pudding

50g (2oz) Butter
5 tbsp Flour
3 tbsp White Bread Crumbs
3 tbsp Raisins
3 tbsp Currants
2 tbsp Sugar
1 Egg
1 tsp Mixed Spice
1 tsp Bicarbonate Of Soda
Milk

Sift the flour into a bowl, add the breadcrumbs
Rub in the butter, add the sugar, mixed spice and dried fruit, mixing thoroughly.
Dissolve bicarbonate soda in a little milk, add the beaten egg.
Add to the other ingredients to create a fairly slack dough, adding more milk if necessary
Turn into a greased basin, cover with a square of greaseproof paper and a square of cloth or muslin
Steam puddings for 3 hours, ensuring that the water does not evaporate, topping up with boiling water as needed.
Turn out and serve hot with custard.
