Golden Wardens
Warden is an old name for the small hard cooking pears that grew in country gardens.
6 Pears
225ml (8fl oz) White Grape Juice or Wine
1 Lemon, juice only
Honey
Pre-heat oven to 180°C: 350°F: Gas 4
Peel the pears thinly, leaving the stalks on, roll each one in the lemon.
Select a casserole or baking dish with just big enough to lay pears head to tail in single layer.
Place the pears into the dish.
Spoon over 4 tablespoons honey and adding any remaining lemon juice.
Heat the grape juice (or wine) to simmering point and pour over the pears.
Cover the dish and bake basting frequently, turning occasionally, until the fruit is tender.
The time will vary depending on the type of pear and degree of ripeness.
When cooked, transfer to a serving dish, standing upright.
Boil the remaining liquid until it turns syrupy.
Stir in an extra honey, spoon the syrup over the pears.
Serve warm or cold.
