Perry Pears
4 Cooking Pears
600ml (1 pint) Perry or Cider
140g (5oz) Apricot Jam
50g (2oz) Brown Sugar
Cinnamon Stick
Ground Ginger
Place the perry (or cider) into a saucepan with the jam, sugar, cinnamon stick and a good pinch of ground ginger.
Bring to the boil and simmer for a few minutes, stirring well.
Peel, quarter and core the pears and add to the saucepan.
Place the cover on the saucepan and simmer gently for at least 30 minutes or until the pears have softened.
Remove the pears and reserve.
Remove the cinnamon stick, increase the heat and reduce the sauce to about half.
Pour over the pears allow to cool.
Serve either warm or cold with cream or ice cream.
