Regal Plum Pudding
900g (2lb) Eggs
900g (2lb) Raisins
750ml (1¼ pint) Milk
1 x 450g (1lb) Loaf Raisin Bread
450g (1lb) Candied Fruit, diced
350g (12oz) Beef Suet
275g (10oz) Brown Sugar
275g (10oz) Dates
275g (10oz) Plain Flour
150ml (¼ pint) Orange Juice
160g (6oz) Chopped Walnuts
2 tsp Ground Cinnamon
2 tsp Orange Peel
1 tsp Baking Soda
1 tsp Ground Cloves
1 tsp Ground Mace
1 tsp Vanilla
½ tsp Salt
Soak bread in milk and break it up.
Stir in ground suet, brown sugar, beaten eggs, orange juice and vanilla.
In a separate bowl, combine raisins, chopped dates, chopped candied fruits, orange peel and nuts.
In another bowl, stir together flour, cinnamon, cloves, mace, soda and salt.
Add to mixed fruit and mix well.
Stir in bread-suet mixture.
Pour into well-greased 4 pint bowl.
Cover with foil and tie on tightly.
Place bowl in large saucepan with boiling water and cover.
Steam for 3½ hours.
Adding more boiling water as needed.
Serves 10 - 12
