Welsh Llanddarog Fair Cakes

12oz (335g) Self-Raising Flour
8oz (225g) Butter
6oz (160g) Castor Sugar
4oz (110g) Mixed Fruit (Sultans, Raisins, Currants)
3tbsp Beer

Pre-heat oven to 190 °C; 375 °F; Gas mark 5.
Rub the butter into the flour and add the sugar.
Mix in the beer to form a soft dough.
Roll out on a floured surface to a thickness of ½ inch.
Shape into 6 rounds and press the fruit into the surface.
Bake for 15 minutes.
