Tortellini Soup

2 tins (14oz) Vegetable broth
1 tin (14oz.) Chopped Tomatoes
225g (8oz) Tortellini
110g (4oz) Mushrooms
110g (4oz) Spinach
50g (2oz) Parmesan Cheese
6 fresh Basil leaves
3-4 Cloves Garlic
1 tsp butter

Sautee finely chopped garlic in butter.
Add broth and bring to boil.
Add tortellini and simmer for about 6-8 minutes.
Add tomatoes, the cleaned, stemmed, and torn spinach, sliced mushrooms, and basil.
Simmer for 2-3 minutes.
Stir in grated parmesan and serve.
