Hearty Soup

Serves 6
225g (8oz) Cooked Chicken, Beef or Ham
225g (8oz) Potatoes
225g (8oz) Carrots
I small Onion
1200ml (2 pints) Water
1 Packet Dry Onion Soup Mix
1 tin Chopped Tomatoes
110g (4oz) Small Pasta
1 tsp Oil
½ tsp Sugar
Mixed Fresh Herbs
Salt & Black Pepper
Worcester Sauce (optional )

Thinly slice the potatoes, carrots and onion
Place the oil to saucepan over a medium heat and fry the onion until transparent.
Add meat and brown lightly, then add potatoes, carrots, tomatoes, onion soup mix and water.
Bring to a boil, reduce heat and simmer for 10-15 minutes.
Allow to re-boil gently then add pasta, stirring to ensure pasta does not 'stick'.
Simmer gently for 15 to 20 minutes or until vegetables are tender and pasta is cooked.
Taste - add seasoning, sugar and Worcester sauce if used, to taste.
Add chopped fresh herbs before serving.

Tip: You can to add any leftover vegetables.
