Bourbon Sweet Potatoes
450-680g (1-1½lb) Sweet Potatoes
85g (3oz) Light Brown Sugar
80ml (3floz) Bourbon Whiskey
4 tbsp Butter, softened
Pecan halves
Salt
Pepper
Pre-heat the oven to 170°C: 325°F: Gas 3.
Peel the sweet potatoes and boil until tender.
Allow to cool slightly and mash adding the butter, sugar and whiskey, seasoning to taste.
Place into a greased casserole dish, top with pecan halves.
Bake for 20 to 25 minutes until golden brown.
