Candied Yams

900g (2lb) Garnet Yams or Sweet Potatoes
115ml (4floz) Fresh Orange Juice
80ml (3floz) Maple Syrup
½ Orange, zest only
2 Cinnamon Sticks, Broken In Half
2 tbsp Olive Oil
1 tbsp Lemon Juice
2 tsp Fresh Ginger grated
Sea Salt

Pre-heat the oven to 190°C: 375°F: Gas 5.
Peel the yams and cut in half crossways, then cut each half lengthwise into 4 wedges.
Place into a lightly greased baking dish, in a single layer, tucking halves of the cinnamon sticks around the dish.
Mix all of the remaining ingredients in a bowl until well combined.
Pour the mixture over the yams (or sweet potatoes).
Bake, basting every 15 minutes, for about 75 minutes or until tender, glazed and coating is syrupy.
Remove the cinnamon sticks before serving.
