Chocolate Brownies

285g (10oz) Caster Sugar
225g (8oz) Unsalted Butter
340g (12oz) Plain Chocolate
110g (4oz) Pecan or Hazel Nuts
85g (3oz) Cocoa Powder
85g (3oz) Plain Flour
4 Eggs

Pre-heat the oven to 190°C: 375°F: Gas 5.
Lightly grease a 20cm (8 inch) square baking tray.
Whisk the eggs and sugar together until smooth.
Melt the butter and beat into the above mixture.
Sieve the flour and cocoa podwer together and fold into the mixture.
Melt 225g (8oz) of the chocolate in a bowl, over a saucepan of gently simmering water, stir into the mixture.
Chop the nuts and remaining 110g (4oz) of chocolate into 1 cm (½ inch) chunks, stir into the mixture.
Bake for 30-40 minutes, until risen and fairly firm.
Remove from the oven and allow to cool, before cutting into squares.
