American Muffins
285ml (½ pint) Milk
225g (8oz) Self-Raising flour
175g (6oz) Blueberries, Raspberries or Blackberries
75g (3oz) Caster Sugar
50g (2oz) Margarine
2 Large Eggs
1 tsp Baking Powder
1 Lemon, zest only
Pre-heat the oven to 200°C: 400°F: Gas 6.
Sieve the flour and baking powder into a large bowl.
Rub in the softened margarine and mix in the sugar.
Whisk the eggs and milk together and add to the mixture a little at a time, ensure all is fully combined.
Add the berries and lemon zest, stirring to ensure they are equally distributed.
Divide the mixture between 12 muffin cases.
Bake for 20 to 25 minutes or until risen and golden brown.
Allow to cool for a few minutes on the baking tray, then transfer to a wire rack.
May be eaten warm or allowed to cool.
