Spiced Brown Lentils
110g (4oz) Brown Lentils
1 Medium Onion
1 Garlic Clove
Vegetable Stock or Water
2 tsp Marmite
2 tsp Ground Cumin
2 tsp Ground Coriander
2 tsp Paprika
1 tsp Ground Ginger
Chilli Powder
Salt and Pepper
Check lentils for any small stones, wash well.
Follow the cooking instructions on the package, as to whether they need to be pre-soaked.
Chop the onion and crush garlic, then gently fry in a little oil until tender.
Add the spices and continue to cook for a 1-2 minutes, ensuring they do not burn.
Add the lentils and 235ml (8floz) of heated stock.
Bring to the boil, adding the Marmite and season with black pepper.
Reduce the heat and simmer very gently for 1½ hours or until tender, adding additional stock or water as needed.
Serve with baked potatoes and steamed vegetables.
