Carrot and Raisin Salad

225g (8oz) Carrots
110g (4oz) Pineapple Chunks
2 tbsp Unsweetened Pineapple Juice
2 tbsp Raisins
1 tbsp Cider Vinegar
Pinch Cinnamon
Pinch Ground Nutmeg

Place the raisins, pineapple juice, vinegar and spices.
Allow to stand for 30-45 minutes.
Peel and coarsely grate the carrots.
Roughly chop the pineapple chunks.
Combine all of the ingredients.
Cover and chill slightly before serving.
