Chickpea Salad

225g (8oz) Chick Peas
115ml (4floz) French Dressing
110g (4oz) Caerphilly Cheese - [Optional]
3 Tomatoes
2 Bunches Watercress
1 Onion
1 Red Pepper
1 Clove Garlic
1 tbsp Parsley

Wash and soak the chick peas for 6-8 hours or over night.
Rinse, place in a saucepan, cover with water, bring to the boil and simmer for 60 minutes or until tender.
Remove from the heat, strain and rinse with cold water, allow to cool.
Peel and finely chop the onion, quarter and de-seed the pepper and cut into thin slices, cut the tomatoes into wedges, roughly chop the watercress and mix with the chick peas.
Cut or crumble the cheese into small pieces and add o the salad.
Finely chop the parsley and garlic add to the dressing.
Pour the dressing over the salad and serve.
