French Dressing
6 tbsp Extra Virgin Olive Oil
2 tbsp Wine Vinegar
1 tsp Dijon Mustard
Pinch Sugar
Salt and Pepper
Either place all of the ingredients into a bowl and whisk well, or place into a screw top jar and give it a really good shake.
Variations: If you prefer a lighter dressing use sunflower or groundnut oil, vary the type of vinegar used: white or red wine, cider or fruit vinegars can be used, as can lemon or lime juice. Try adding some freshly chopped herbs or crushed garlic.
