Roast Garlic and Potato Dip

1 Head Garlic
2 Large Potatoes
3-4 tbsp Parsley (or Basil)
1 Lime, Juice Only
Oil
Salt and Pepper

Pre-heat oven to 200°C: 400°F: Gas 6.
Place the garlic on to a baking tray, drizzle with a little oil and cover.
Bake for 25-35 minutes, or until the cloves feel soft when gently squeezed.
Peel the potatoes and cut into pieces.
Boil until tender.
Mash the potatoes.
Squeeze the roast garlic cloves into a bowl.
Add the potatoes, chopped parsley, lime juice and season to taste, mixing well.
Serve with raw vegetables, melba toast or biscuits.
