Mushroom Burgers

12 Medium Portobello Mushrooms
110g (4oz) Cooked Barley
Fresh Breadcrumbs
2 Egg Whites
1 Medium Onion
1 tbsp Soy Sauce
Oil
Salt and Pepper

Wipe the mushrooms, remove the stems and roughly chop the caps.
Peel and roughly chop the onion.
Place the onion mushroom stems into a blender or food processor and chop.
Transfer to a bowl and mix in the remaining ingredients, season to taste, adding enough breadcrumbs to produce a firm mixture which will hold together when lightly squeezed.
Shape into patties and fry until golden brown, turning once.

Note: If liked you can add some chillies to the mixture.
