Nut Cutlets

340g (12oz) Fresh Breadcrumbs
225g (8oz) Walnuts or Pecan Nuts
80ml (3floz) Vegetable Stock
2 tbsp Margarine
1 Small Onion, chopped
3 tbsp Silken Tofu
2 tbsp Flour
1 tbsp Apple Sauce
¼ tsp Thyme
Salt and Pepper, to taste

Chop the nuts in a blender.
Finely chop the onion and fry in a little oil until lightly browned.
Stir in the flour mixing well and cook gently for 1-2 minutes.
Add the tofu, apple sauce and stock, combining well
Remove from the heat and allow to cook slightly before adding enough seasoned breadcrumbs to produce a firm mixture.
Chill mixture.
Shape into 8 cutlets.
Coat with a little flour, fry in hot vegetable oil until browned on each side.
