Pear and Watercress Salad with Blue Cheese Dressing
This salad (or side dish) is a mix of the fruity flavour of the pears and spicy flavours of the pepper and watercress, seasoned with a creamy cheese sauce.
2 Bunches [about 90g(3oz)] Fresh Watercress, trimmed and washed
3 Pears, cored and thinly sliced
150g (5½oz) Toasted Hazelnuts, coarsely chopped
Juice of 1 Lemon
75ml (3floz) Hazelnut oil (available from specialist food stores)
15ml (½floz) Red Wine Vinegar
Freshly Ground Black Pepper
250g (9oz) Gorgonzola Cheese, plus extra to garnish
Place the washed watercress into a bowl and add the pears, hazelnuts and lemon juice.
Toss the salad and divide among four to six serving bowls.
Place the hazelnut oil, vinegar, pepper and Gorgonzola into a food processor and blitz until smooth and well blended.
Pour the dressing over the salads and garnish with chunks of Gorgonzola.
Serve immediately.
NB: No salt is need, as the cheese will be salty enough.
