Peasant's Salad

225g (8oz) Small Broccoli
170g (6oz) Small Cauliflower
110g (4oz) Mushrooms
110g (4oz) Caerphilly Cheese
2 Ripe Plum Tomato
½ Cucumber
½ Small Red Onion
½ Red Pepper
½ Yellow Pepper
6 tbsp Balsamic Vinegar
2 tbsp Fresh Basil
2 tbsp Fresh Oregano
Salt and Pepper, to taste

Wash and cut the broccoli and cauliflower into florets.
Quarter and very thinly slice the onions.
Brush and thinly slice the mushrooms.
Quarter and thinly slice the peppers.
Peel and cube the cucumber.
Core and chop the tomatoes.
Roughly chop the herbs.
Crumble the cheese.
Place all of the ingredients into a bowl and toss well, seasoning to taste.
Refrigerate for at least 2 hors to allow to marinate and for the flavours to blend.

Serves: 6
