Potato Casserole
340ml (12floz) Vegetable Stock
110g (4oz) Mushrooms
2 Onions
2 Potatoes
2 Cooking Apples
1 tsp Sage
2-3 Garlic Cloves
Salt and Pepper, to taste
Peel and thinly slice the potatoes onions and garlic.
Peel, core and thinly slice the apples.
Place the onions and garlic in a flameproof casserole dish with the stock and poach gently until they become transparent.
Add a layer of potatoes the sage and season to taste, cook until just tender.
Add layers of apples and mushrooms.
Simmer for 5 minutes.
Remove from the heat, arrange so that there is a layer of potatoes on top .
Place in a pre-heated oven at 180°C: 350°F: Gas 4.
Bake until golden brown, you can place it under the grill after baking if desired.
Serve with green vegetables or salad.
