Scalloped Potatoes

4 Medium Potatoes
340ml (12floz) Milk
1 Medium Onion
2 tbsp Flour
1-2 Garlic Cloves
½-1 tsp Cayenne Pepper
Nutmeg
Salt and Pepper, to taste

Pre-heat oven to 180°C: 350°F: Gas 4.
Peel and thinly slice potatoes and onion.
Place the milk. flour, cayenne, a pinch of ground nutmeg and crushed garlic into a saucepan, bring to the boil whilst stirring.
Reduce to a simmer and cook for a few minutes until thickened, remove from the heat and allow to cool slightly.
Lightly oil a casserole dish and rub with a little crushed garlic.
Add a layer of potato slices, then a few onion slices, season lightly, pour over a little of the liquid.
Continue layering, finishing with a layer of potatoes.
Cover and bake for 60 minutes, removing the cover for the final 15 minutes to allow to brown slightly.
