Stuffed Marrow
340g (12oz) Cooked Rice or Beans
110g (4oz) Mushrooms
1 Large Marrow
3 Tomatoes
3 Sticks Celery
1 Red Pepper
1 Onion
1 Apple, chopped
Paprika [Optional]
Dried Chilli [Optional]
Curry Powder [Optional]
Pre-heat oven to 170°C: 325°F: Gas 3.
Cut the marrow (either in half or at one end) scoop out the fresh.
Clean the vegetables slice the mushrooms and cut the onion, pepper, celery and apple into a fine dice.
Fry all of the vegetables, (adding some of the marrow fresh if desired) until softened.
Add the apple and spices (if used).
Fry for 1-2 minutes.
Stuff the marrow with the mixture.
Place in an ovenproof dish and bake for 30-45 minutes.
