Honey Roast Parsnips
900g (2lb) Parsnips peeled and quartered
55g (2oz) Butter
2 tbsp Clear Honey
2 tbsp Oil
Pre-heat oven to 220°C: 425°F: Gas 7.
Peel and remove the woody centres of the parsnips.
Heat a roasting tin on top of the stove, add the oil and butter.
Fry the parsnips until browned on all sides.
Roast for 20 minutes, turning occasionally.
Pour the honey over the parsnips and carefully turn them, ensuring all are covered.
Return to the oven for 5 minutes.
Stir and spoon some of the honey glaze from the pan over the top to glaze.
