Irish Braised Celery
Serves 4
1 Head Celery
1 medium Onion
2 Slices Bacon (Optional)
300ml (½ pint) Vegetable Stock
25g (1oz) Butter
1 tsp Chopped Parsley
Salt and Black Pepper
Pre-heat the oven to 170°C: 325°F: Gas 3.
Clean celery, cut into one-inch pieces and place in a casserole dish.
Finely chop bacon, parsley and onion and sprinkle over celery, seasoning to taste.
Pour over the stock.
Dot with knobs of butter.
Cover dish and bake for 30-45 minutes.
