Leeks in Cheese Sauce
500g (1lb 2oz) Leeks
450ml (¾ pint) Milk
110g (4oz) Cheddar Cheese
25g (1 oz) Plain Flour
25g (1 oz) Butter
¼ tsp Garlic Salt
Pinch Ground Bay Leaves
Pinch Mustard Powder
Pinch Nutmeg
Cut the leeks into 5 cm (2 inch) pieces.
Place the leeks in boiling water and simmer for 10 minutes.
Drain well, place in a flameproof dish.
Place the milk, plain flour and butter in a saucepan.
Bring to the boil, stirring or whisking continuously.
Simmer for 2-3 minutes.
Add the nutmeg, mustard powder, garlic salt and ground bay leaves.
Add 85g (3oz) of grated cheese, stir until melted.
Pour the sauce over the leeks.
Sprinkle with the remaining cheese.
Pre-heat oven to 200°C: 400 °F: Gas 6
Bake for 20-30 minutes or until golden brown.
