Potato Clouds
450g (1lb) Mashed Potatoes
225g (8oz) Cottage Cheese
3 eggs
3 tbsp Onion
1 tsp. Parsley
¼ tsp. Garlic Salt
Black Pepper
Separate eggs and beat yolks.
Add yolks, finely chopped onion, cottage cheese, chopped parsley and seasoning to potatoes and mix well.
Beat whites until stiff and gently fold into mixture.
Place into a casserole dish.
Bake in a preheated oven 180°C; 350°F: Gas 4 for 1 hour.
