Potatoes Baked in Ale

900g (2lb) Potatoes
300ml (½ pint) Real Ale
175ml (6fl oz) Cream
2 Large Onions, thinly sliced
4 tbsp Butter, very cold
Salt and Pepper

Pre-heat oven to 230°C: 450°F: Gas 8
Scrub the potatoes well and slice them thinly.
Place alternate slices of onion and potato in a buttered casserole dish, packing closely together.
Season each layer lightly.
Pour over the beer and add knobs of butter, evenly distributed.
Bake for 10 minutes.
Reduce the temperature to 180°C: 350°F: Gas 4 and bake for a further 40 minutes.
About 10 minutes before the end of baking, pour the cream evenly over the top and return to the oven.
Serves 4.
